You might be proud of me for this one, but this is a recipe I actually invented. That’s right, you read me correctly, I INVENTED it. I finally decided to make a main but I wasn’t sure what I could do. I pondered the possibilities and decided I should create one. I called this one, “The Spicy Pepper Chicken”. The title explains everything.
For this recipe I used a Jamie Oliver flavour shaker, but a mortar and pestle is highly recommended (manually grinding will help bring out the flavours more). A flavour shaker works by putting all the herbs and spices in a little circular pear shaped jar. The jar splits in two and inside is a small white ball, similar to a golf ball, and once the spices are in and you’ve replaced the lid, you can shake it as much as you want to blend the spices and to crush them.
This recipe’s very simple and a little bit spicy (hence the name Spicy pepper chicken), but I did enjoy it very much. Here’s the recipe:
Ingredients:
-1 tablespoon pepper corns
-1/4 teaspoon Chilli (ground; if you don’t have ground chilli some chilli flakes should work fine)
-Salt flakes (just a few pinches)
-4 chicken breasts (this can vary depending on how many chicken breasts you have; you can do the maths with the other ingredients
)
-2 cups Cous Cous
-1-2 teaspoons chicken stock
-Dash of oil (peanut or olive – doesn’t matter)
Place the pepper corns, chilli and some salt in a flavour shaker, mortar and pestle or something else like that and grind until fine. Place mix in a large bowl and add the chicken. Toss to combine. Place the dash of oil in a fry pan and heat until hot. Add chicken and fry until brown and cooked. Meanwhile, place the Cous Cous in a bowl (fairly decent size) and add 2 cups of boiling water and chicken stock. Stir and leave to cook. Cous Cous is a great thing, it cooks so easily. Divide the cous cous between four plates and place a chicken breast on each. Serve with parsley (optional). Serves 4.
I hope this is good; I enjoyed it. I’ll start to be cooking more mains soon so hopefully this blog will get a little more “spicy”.
