Spicy Pepper Chicken March 6, 2011

Ingredients:
-1 tablespoon pepper corns
-1/4 teaspoon Chilli (ground; if you don’t have ground chilli some chilli flakes should work fine)
-Salt flakes (just a few pinches)
-4 chicken breasts (this can vary depending on how many chicken breasts you have; you can do the maths with the other ingredients )
-2 cups Cous Cous
-1-2 teaspoons chicken stock
-Dash of oil (peanut or olive – doesn’t matter)

Place the pepper corns, chilli and some salt in a flavour shaker, mortar and pestle or something else like that and grind until fine. Place mix in a large bowl and add the chicken. Toss to combine. Place the dash of oil in a fry pan and heat until hot. Add chicken and fry until brown and cooked. Meanwhile, place the Cous Cous in a bowl (fairly decent size) and add 2 cups of boiling water and chicken stock. Stir and leave to cook. Cous Cous is a great thing, it cooks so easily. Divide the cous cous between four plates and place a chicken breast on each. Serve with parsley (optional). Serves 4.
